Stuffed orange bell pepper🥰 Its super easy and very delicious to make! This is a collaboration with the @oranjepaprika! #oranjepaprika #goedvoorjeogen Here’s my recipe (2 persons or 1 when having a big appetite😜): - 4 orange (I only had 3 thats why the red one) bell peppers - a bag of lentils washed and drained (200 grams) - a yellow onion - half a zucchini (/courgette) - 2 carrots - handful of cherry-tomatoes - a can of tomato puree (70 grams) - fresh parsley - water if needed - salt & pepper Preparation: Cut the upper-side of the bell pepper and save it (make sure that the inside of the bell pepper is empty and no seeds left). Heat up some oil in a pan. Then cut the yellow onion finely, the zucchini in little chunks, the carrots also in little chunks and the cherry tomatoes in quarters. Add the veggies to the pan and throw in the lentils and some fresh parsley. Once the onion is a little glazed, add the tomato puree and stir it well through. Add some water if needed (do not make it to saucy). Meanwhile cooking , preheat the oven at 175 degrees celsius. Once everything is well cooked, divide the mixture in the bell peppers. Then place the upper-side of the bell pepper on top. Place the stuffed bell peppers on a tray and put it in the oven for about 25-30 minutes. Check every 5-10 minutes if the bell peppers arent burning. Once they al shrunk and done, its ready to serve! Enjoy❤️ • • • • • • • • • • • • •
