Yup, it's been a while since my last post. I've had a little writersblock(or should I say cookersblock👩🏽🍳?), but now the inspiration is back. I will try to do two new posts and recipes each week. Starting with these taco's with homemade black bean dip, baked oyster mushrooms, caramelized red onion, parsley, avocado and the star of this show: the orange bell peppers. Thanks to @oranjepaprika ! For the black bean dip I put in the food processor a can of black beans, a quarter of a red onion, one clove of garlic, 5 cherry tomatoes, a handfull of parsley(I'd have used cilantro, but unfortunately I really don't like it😓), the juice of half a lime, salt pepper and red chili flakes. I blended it all until I liked the consistency.
I fried the orange bell pepper in a pan with a little sunflower oil until they were nice and tender. Afterwards I seasoned it with a bit of homemade "taco" seasoning.
